What kind of fishing boat can I buy for $500 or less?
I know it won’t be a fancy bass boat, but will it be OK to fish with? What size motor would it have?

A fishable boat, but that’s about it.
Um… good luck finding a motor for under $500 if it works. My kayak was $700 and change, but maybe a lower end ‘yak, or an aluminum johnboat or a canoe or something. Expect to paddle, or expect a burnt out motor, or leaks or things along these lines when spending under $500 on a boat.
In that price range you will only find a beat up canoe or kayak. Either can be great to fish from.
With that kind of money or less is better a canoe, it’s has more room to fish than a kayak. If decide for a kayak try to install a fishing pole on it.
