chop some onions, garlic, and hot pepper. Mix in with lots of lime or lemon juice, and a little salt. You can also put some seeded and chopped tomato or tomatillo. Empty, scale, etc, your fish, and cut it into small pieces. Mix to the lime mixture, and let sit covered and refrigerated for 8 or more hours.
Serve with corn chips, or small corn tortillas and lettuce as mini tacos.

Well this is the cevivhe from my country ….
you get like 3 slides of filet tilapia. shrimps, calamari, and some shells.
18 to 20 Limes
Red Onions.
Cilantro.
Salt, Pepper and a very good hot pepper.
Cut the fish in small squears, then put in a bowl or somewhere with enough depth. cut 10 limes and squeze them onto the fish and put SOME salt and pepper, after that put the shrimps and calamari to boil in water for like 10 min or less(make sure you see the water a little orange), you have to do the fish first because the fish has to be cook with the lime. while the shimps are boiling cut the red onion, then dice a small branch of cilantro very thin … wash the onion on water and slide it in semi moon shape and very thin. Take out the shrimp and calimari and dice them in small pieces too. after that put the shells along with the fish and squeze 5 more limes and put the cilantro over the fish and shells …. leave it for a little while and put the shrimps, calimari, and onions all together some salt and pepper … then drink a cup of wine like for 20 mins …. then enjoy the best CEVICHE ever from PERU.
You can cook some sweet potatos and eat them along with it … some corn is good too

I don have a recipe but just wanted to share that I love them!!! I was first introduced cerviche by a Colombian friend of mine! And there is an awesome bar/restaurant at downtown Silverspring called Cerviche!!! They serve all kind of seafood cerviche… from oysters to fish!

Cilantro Seafood Cerviche
1 lb fresh or frozen uncooked fish, peeled
1/2 lb fresh or frozen uncooked squid
2 medium tomatoes, chopped
1 bunch fresh cilantro, chopped,to taste
10-12 limes, juice of
salt and pepper, to taste

1. Cut shrimp and squid into small bitesize pieces.
2. Place meat in a large bowl and pour in the lime juice (meat should be completely covered with the lime juice).
3. Cover and let soak in the refridgerator for 1-2 hours or until the meat is tender and white (The whiteness of the meat will tell you that it has cooked in the acid).
4. Add cilantro and tomatoes and mix well.
5. Add salt and pepper to taste.
6. Place in a sealed container and chill.
7. Serve cold alone immediately or let soak for more flavor.
8. The recipe keeps refridgerated in sealed container for 3-4 days.
