i need a good recipe for ground deer meat or a god way to cook fillets of bass?


i have never cooked either myself. i am a newly wed and i wanna impress the hubby! lol

    you cook deer just like beef….of course you want to cook any cut to well done as it is a wild animal….it does have a distinct gamy taste….that if you are not used to, may take some getting used to….for ground venison you can cut it half and half with ground beef to make it taste more like beef

    the bass cooks like any other fish you have ever made

    Best chili in the world is made with ‘deerburger’, low fat [unless whoever did your butchering added in some suet?] and highly flavorful. If you want to cook deerburger ‘steaks’, I’d recommend using soft breadcrumbs, seasoned salt, an egg, finely chopped onion and chopped fresh parsley, and [surprise! but it works] finely grated carrots–about a small handful for a pound of ‘burger’. Then form oblong or oval patties, brown well, then add a cup of broth or bouillon and put a tight lid on and let simmer very slowly. Deerburger is dense and chewy, so you need to add something to loosen it up [breadcrumbs and grated carrots] and something to bind the mix [egg] and tone the gameyness out [herbs & parsley]. The broth is needed to offset the lack of fat or natural juices. Think of newlywed you as a kind of magician-in-training, OK? Shazam!

    Use ground deer meat like you would ground beef. I have started adding a beef bouillon cube to it when I brown it to give it a little more beef taste. I have used it in chili, spaghetti sauce, hamburger helper, etc. You can make deerburgers, like hamburgers but personally, I don’t like them as well.

    As for the bass, you can bake it with a little lemon juice, butter or margarine, salt & pepper. Maybe a little dill if you like it.
