first put your bass fillet in seasoned flour skin side down! the then put into a pan skin side down until golden brown!roast some new potatoes and boil brocolli and add lemon twist! the simplier the better
if sea bass whole roast for 20mins or untill cooked
***Sea Bass alla Fiorentina***
4 (6-ounce) pieces sea bass
1/4 teaspoon salt, plus more for seasoning fish
1/2 teaspoon freshly ground black pepper, plus more for seasoning fish
2 cups all-purpose flour
3 tablespoons extra-virgin olive oil, plus 3 tablespoons
3 garlic cloves, chopped
1 (14-ounce) can crushed tomatoes
1/2 cup water
1 tablespoon chopped fresh parsley leaves
1 tablespoon chopped fresh basil leaves
Season both sides of the fish with salt and pepper. Put the flour in a shallow bowl, dredge the fish, tapping off the excess flour to create a light coating.
In a medium nonstick fry pan, heat the 3 tablespoons olive oil over medium heat. Cook the fish until golden brown, about 3 minutes per side. Transfer fish to a plate.
Wipe out the pan with a paper towel and heat the remaining 3 tablespoons olive oil over medium heat. Add the garlic, tomatoes, water, parsley, 1/4 teaspoon salt, and 1/2 teaspoon pepper and cook at a simmer for 10 minutes. Add the basil and the fish and heat for 2 minutes. Serve immediately.
***Fennel and Herb Roasted Sea Bass***
4 fennel bulbs, sliced
1 whole sea bass, cleaned and scaled (about 4 pounds)
1/4 cup olive oil 3 heads garlic, sliced in 1/2
5 medium zucchini, sliced into 1/2-inch rounds
2 bunches fresh oregano (about 4 ounces)
1 bunch fresh thyme (about 2 ounces)
1 bunch fresh dill (about 2 ounces)
5 medium tomatillos, cut in 1/2
1/2 cup green olives
Preheat broiler. Line a large roasting pan with the sliced fennel. Make 3 (3-inch) long incisions on each side of the fish. Coat fish with olive oil and insert a slice of fennel into each incision. Place fish over fennel in the roasting pan. Surround and cover the fish with all remaining ingredients, including the herb stems and entire heads of garlic. Pour 1 cup water into the roasting pan around the fish. Broil for 30 minutes or until flesh is cooked through and flaky. Serve.
Mmm when I read ‘sea bass’ I immediately thought of covering it in a light layering of crushed lime flavored tortilla chips, baked or lightly fried in a bit of oil. Yum.
