    I love Chilean Sea Bass, and keep the flavor simple. Sprinkle the bass with kosher salt and a little fresh ground pepper. Sprinkle with lemon juice and a little minced garlic (very little!) Brush with melted butter that has lemon zest and a little lemon juice in it and broil. Baste frequently.
