What to serve with sea bass?


My sister and her Italian fiance (who I’ll be meeting for the first time) will be visiting from Europe. She will eat fish/seafood but no other meat. They will be coming in late October. Sea bass will be in season at that time. I think I will make sea bass grilled with:
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon paprika
lemon pepper to taste
sea salt to taste
2 pounds sea bass
3 tablespoons butter
2 large cloves garlic, chopped
1 tablespoon chopped Italian flat leaf parsley
1 1/2 tablespoons extra virgin olive oil
I also have this great recipe for spinach rice with feta, capers, parm, dill, i think a little white wine vinegar. I would like to serve one other vegetable but what??? I was thinking grilled corn but that doesn’t sound right with fish. Carrots–glazed? That doesn’t sound right either. Tomato salad but they will be out of season. Nothing green because there will already be spinach. Nothing starchy because of the rice. Any ideas? Thanks!

    How about a red onion, yellow bell pepper and elephant garlic kabob?

    I think it should be like you said the glazed carrots, or try a side dish of lightly fried and seasoned mushrooms. I do know mushrooms go great with spinach and fish! :)

    I have the perfect healthy sweet side for this dish . Get 4 sweet potato’s , cut them into wedges , place them on a baking sheet with a little olive oil and some cinnamon and rosemary , bake for 30 minutes , and they come out golden and crispy , great sweetness and crispyness with the soft sea bass and yummy hearty spinach rice .

    How about zucchini slices, sauteed with cauliflower florets w/ balsamic and garlic over a bed of long grain and wild rice?

    I know you said nothing green, but i’m telling you that grilled asparagus would be delicious with this menu! I take mine and lightly steam. Then, put in a dish with a little olive oil, fresh lemon juice, sea salt and fresh pepper. Let it sit while the rest of your meal is cooking. Once everything else is almost ready, throw it on the grill for just a few minutes to finish cooking, then drizzle with melted butter, a little more lemon, and top with shaved Parmesan cheese……really, really yummy!
