Ahh, a true optimistic fisherman. The best way is to use an electric fillet knife. This past weekend I filleted out 31 bass in 25 minutes. And without a deep fryer I would use a large frying pan with enough oil that you could cover the fish completely. When the fillets float to the top, they are considered done in my book.
