We don’t have white or striped bass in this area, we live in northern NYS. But we do have large and small mouth bass, both are good.
Ive eaten white bass, large and smallmouth bass. all three are VERY tasty.

White bass and stripers are by far the best eating. “Greenfish” (large and small mouth bass) tend to have a flavor of the water they’ve been in. It’s hard to describe the flavor but some like it and some don’t. As for white bass and stripers…the taste is great (for me anyways.) Fry up some fillets, add a side of fries and slaw with an order of clams or oysters…dear Jeez…You just made me prep a trip to Texas. It’s that good!
Large and small mouth bass are very good eating, the best size is 12 to 18 in. White/sand bass and hybrid and stripers are very good eating also but depend on removing the red line down center of each side, other wise you will get a very strong taste.

Stripers/Hybrids/White are tasty.
Even Smallmouth can be good.
Personally, Large-Mouth are only for “Catch & Release”!
If your at the lake and want a “dinner” catch some Bluegills/Perch/Crappie. I find these fish to be “sweeter” and tastier than most Bass. And MUCH easier to catch!

I tend to disagree with most. I usually fish a small stream in SE Ohio and there is a huge difference between the taste in smaalmouth and white bass. The smallmouth are much better table fare. I have tried the white bass but there is a noticeable gamey taste and I associate that with the red streak along the tail.

i don’t really eat bass, but i have been informed by the game and fish comission we should keep some of the bass we catch in order for the population to thrive.
